10 Easy Healthy Mother’s Day Recipes, Make your Mom feel special.

Be it our working day, a weekend, or even some vacation, the most busy person is our mom. It is only after a whole cycle of 365 days that a mother’s day comes. Though we celebrate mother’s day only once a year, we need to thank her throughout the year.  We can do this by cooking for her the recipes that result in a
healthy living. Aweganics has come up with a list of healthy recipes that we can cook for her this Mother’s day.

The Recipes

Cashew Chicken Quinoa Bake: A recipe from an Asian cuisine home, cashew chicken and quinoa bake are a great one-pot meal you can cook for your mother. When you serve and eat with her, it is a double-delight for her. In Asian kitchens, this meal is cooked along with rice and not Quinoa, and the number of vegetables that are added are but a few. Make it tasty by adding sauce and more veggies. All you need to do is put the ingredients together and the oven will do the rest.

Lemony Brussels Sprout Salad: Without salad, you cannot imagine a healthy meal. This sprout salad from Brussels is very good for those who are following a keto diet. A topping of Smoked almonds and dry cranberries can add to the flavor of the salad.  Do not forget to include this in the meal you prepare for her.

Vegetable Paella: Generally, the food is mixed with meat or seafood. However, when cooked with vegetables such as beans, red pepper, and tomato, the crisp flavor will be liked by your mom. Mix it with rice and serve with lemon wedges. A healthy recipe for your mom.

Shakshuka: This is a mixture of tomato and onion in its very basic form. The two ingredients need to be cooked thoroughly with plenty of spices. Once they are saucy and fragrant, bake them along with eggs. Serve with bread and sauce. You can also sandwich it with other ingredients or veggies you have at hand. If you don’t want a non-veg diet for your mom, you can leave out the eggs, and include cabbage, and/or capsicum also.  Provide a healthy diet to your mom.

Spring Green Salad with Apricot Vinaigrette: Simple to make and does not cost much even. Collect all the green veggies of the season. Mix them up with shallots, Dijon, and dehydrated apricots to provide an energetic and tasty salad. Besides, this salad contains almost all  the fibers our body needs. Ingredients such as spinach leaves, beet leaves, arugula and lamb’s lettuce provide all the vitamins you will ever need. Let your mom feel energetic after all she is always working.

Spring Pea Carbonara: Take the frozen veggies and turn them into a pasta dish that everyone on the table will love. Eggs provide the creaminess to this recipe. When tossed with warm dente noodles, a nice blend is produced. What adds taste to this recipe is the peas, and that too frozen. Do not use peas that have been in the refrigerator for a long time. That might take some of the taste away. Don’t let that happen. Let your mom enjoy the food prepared well with a nice recipe.

Pomegranate-Honey Glazed Chicken and Squash: This chicken recipe will prove to be an even healthy recipe when combined with Pomegranate and honey. To impress your mom, just add some seasonal vegetables and feta cheese. Serve, but first to your mom and others later. 

Roasted Salmon with Broccoli and Potatoes: A roasted salmon, some crisp potatoes, and a broccoli will make your mom’s day. To up the flavor you can also add lemon juice, garlic, and mayonnaise. Your mom is going to love it.

Summer Pesto Pasta: This pasta is something in its own – a mixture of a number of veggies. Grape, Green Peas, Olives, Cannellini Beans, roasted Broccoli, and red onion. You could also add Feta Cheese and Summer Squash if you want to please your mom more than enough.

Peach and Prosciutto Flatbreads: The ingredients are easy to get – Flatbread or Naan, Peach, Prosciutto, Pesto, and a glaze of hot honey. You can even add berries to the mix and spread them over the flatbread. Serve right away to your mom, or store in an airtight container until she returns home.


This Mother’s Day surprises your mom with some extra efforts you make for her. Present her a gift and invite her for lunch or dinner. Cook the meal yourself and reveal it to her when she is eating. She will be doubly happy when she learns what you did for her.
